Why 3/8' Thick?
The reason our steel is 3/8" thick is that it matches the profile of the factory stone so that a big lip is not created at the oven door entrance that can make it difficult to cook perfect pizza, trip up the launch peel and pizza turning peel.

A pizza steel/Oven Steel is a better heat conductor than a pizza stone. The pizza steel is popular for cooking bread and pizza because it is able to transfer heat at a high rate while simultaneously stabilizing at a steady temperature. This means when you place a pizza on the steel, the dough is cooked by the transfer of heat stored in the steel - rather than just the hot air in the oven. Get your family ready for a crispier crust and faster cook times.
Keep in mind with the steel that their is no need to run the steel at very high heat, it will simply burn the bottom of your pizza. The steel should be ready to cook pizzas in about 20 Min. so test the correct operating temperature for your dough. I start with a steel temperature of around 475 and then dial it in from there. People love these inserts and they work fabulous is you can control your oven temperatures. It will make multiple pizza without losing your crust, Lastly, you may season it inside your K-16 Oven, just pre heat to 500 and let it cool overnight- do this twice and your steel will be fabulous.
